{What We're Eating} Crunchy Granola


I LOVE this recipe...it makes for a great breakfast, snack or gift!

Crunchy Granola
  • 7 cups old-fashioned rolled oats
  • 1/2 cup vegetable or coconut oil
  • 1 teaspoon salt
  • 1 1/2 cups sliced almonds, pecans, walnuts or peanuts 
  • 1/2 cup honey
  • 1/2 cup packed brown sugar
  • 1/4 cup water or apple juice
  • 1 Tablespoon vanilla extract
  • 2 teaspoons ground cinnamon (optional)

Line an 18 x 13 inch rimmed baking pan with aluminum foil.
Preheat oven to 375 degrees. Combine the oats, oil and salt in a large bowl and mix until the oats are evenly coated. Transfer the mixture to the baking sheet and spread into an even layer. Bake, stirring every 10 minutes, until pale gold, 20-25 minutes. Remove the oats and lower the oven temp to 300 degrees.
Combine the honey and brown sugar in a saucepan and cook over medium heat for about 5 minutes, stirring constantly, to dissolve the sugar. Remove from heat and stir in the vanilla and cinnamon (if using).

Combine the oats, nuts, and honey mixture in a large bowl and stir with a large rubber spatula until the oats are thoroughly coated with the honey mixture. Spray the baking sheet (still with foil sling) with non-stick spray then transfer the granola mixture to the prepared baking sheet and spread in an even layer. Spray a large metal spatula or a square dish with non-stick spray and firmly press the mixture into the pan. Make a flat, tight, and even layer. Bake until golden, about 30 minutes.

Cool in the baking sheet, on a wire rack, for 10-15 minutes before cutting into bars, I used a pastry scraper to cut.  Cut the bars all the way through and then allow the granola bars to completely cool. Do not wait longer than 15 minutes before cutting the bars. They harden up significantly as they cool. Any longer and you’ll have a very hard time cutting thru them. Waited too long, like I typically do? No worries...just break them up into bite-sized chunks or completely into cereal. Enjoy!

Claire's Cowgirl Birthday


While her first choice was a "Frozen" birthday party, we convinced her to do something different than other kids her age, and this was an awesome choice! She loves the Disney Jr. show "Callie's Wild West" so the inspiration started with her insisting on cowboy boots for her fall shoes. We had the party at a stable in Carmel, and the kids had an absolute blast. They groomed horses, painted a picture frame, and each got a mini riding lesson. They were all so brave for being five and under, and Claire was beaming from ear-to-ear the entire day. We couldn't love her more...our incredibly smart, sensitive, careful, perfection-seeking and quick thinking Claire Elizabeth!

Crazy days of Summer {2014}


It's safe to say we've had a crazy-fun summer! Between OBX family vacations, lake weekends, hundreds of playdates, and joining a pool, we've kept ourselves exhaustingly occupied. Our kids do best when we're busy, so I suppose summer is the season for us. Claire is becoming a great little swimmer and Paige is a busy-bee....well-known for running from mommy, constantly! While her sister always sticks close to mom, Paige is our go-getter. We try to embrace these crazy times, because as we all know, they will all too soon be gone. I try to remember that as I'm chasing my toddler down the sidewalk, along the pool deck, through the house and around the grocery store, all while Claire is begging me to  "watch, watch, WATCH!!" that someday, I'm going to miss these crazy summer days.

Spring happenings...

post signatureIt has seemed to be a jam-packed spring for us, between weddings, birthday parties, poncho-making and neighborhood get-togethers, we've made some precious memories and are gearing up for lake season! Easter was wonderful with a Woodfield egg-hunt and a trip to great-grandma Sally's house, and then April brought the celebration of our favorite nephew, Graham Lee. Happy first birthday to the sweetest and feistiest one-year-old around!
